Local Farmers Market Zucchini Everyone

Need a perfect summer squash recipe using zucchini? Let’s bake a batch of Sedona Eye Zucchini Bread with a loaf for you and one to give or freeze for later!

Local farmer’s markets and produce stands are brimming with fresh squash! Support local farmers!

A fun afternoon drive to Camp Verde passes by many Verde Valley produce stands! Corn, tomatoes and squash are at peak of season!

 Get ready! Bake!

Check your cupboards and assemble ingredients. Prepare loaf pans and set out a wire rack for cooling. Preheat oven!

  • 3 cups all-purpose flour
  • 3 eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 2 cups grated zucchini
  • 1 cup semisweet chocolate chips
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup sour cream

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease two 9 x 5 inch loaf pans.
  2. Beat together eggs, sugar, and oil. Blend in the grated zucchini, and then the sour cream. Mix in the flour, baking powder, soda, and cinnamon. Stir in chocolate. Pour batter into prepared pans.
  3. Bake for 80 minutes. Cool on wire rack.

Hint from AR: Substitute chocolate covered raisins for chocolate chips.

    what fun to include recipes. When recipes call for vegetable oil in large quantities, substitute thick applesauce instead. Does anybody else do this? It should be okay in this recipe.
